The Fast Eddy's™ by Cookshack FEC240 is our newest fixed shelf commercial pellet smoker.  It is 100% wood burning, pellet-fired smoker with the new IQ5 electronic control system. The FEC240 has a small footprint but a high capacity to smoke or barbecue products, making it the perfect choice for large scale operations.  If kitchen space is a premium, then this is the perfect unit for you! It features an offset firebox and convection fan to circulate smoke and heat for steady temperatures throughout the unit. ·         Pellet heat is controlled by a fully automatic wood pellet system.

·         Pellet hopper holds 35 lbs. of pellets for 24-hour continuous usage!

·         With continuous use, the FEC240 produces about 8 oz. of ash per 40 lbs. of pellets used. The danger of fire from removing hot ash and embers is eliminated, unlike log burners that require removal of live coals.

·         Pellets are easily obtainable, inexpensive, and easy to store; available in a variety of flavors.

·         Pellets are 100% food grade wood which contains no binders or additives. The pure wood smoke flavor cannot be beaten.

·         Unlike natural gas and propane, which are fossil fuels, pellets are a renewable resource. Fossil fuel prices are going out of sight; now is a good time to free yourself from depending on gas. Give yourself an 'Atta boy' for going green.

·         Pellets leave behind about 3% of ash — a fraction of the 30% ash produced by logs. No more hauling big buckets of hot ash and burning wood coals to the dumpster. In fact, you can empty ash with a saucepan rather than a trash can.

·         Pellets produce a clean burn for a better smoke flavor, and they are more likely to pass emission standards requirements.

·         Pellets produce low creosote buildup so that the smoker walls require less frequent cleaning.

·         Loading pellets into the FEC's hopper is easy — just pour them in right from the bag.

·         Storing clean plastic bags of pellets is far more desirable than a dirty woodpile on the premises!

·         We have had former stick burner customers report that their health inspectors told them that they had to spray their big woodpile to rid it of bugs, but they could not use the wood for smoking as it had been sprayed! No hassles like this with an FEC!

    1. It must draw air naturally throughout the flue,
    2. Clean the flue every six months,
    3. One inch clearance from combustible materials, (4) the flue should not have more than two ninety-degree elbows in it and be longer than thirty feet.

·       Pellets are a "green" renewable fuel source -- the FEC240 uses no gas! Fast start up, continuous even heat, and precise temperature control give you consistently delicious barbecue. There is no gas flavor aftertaste to overcome.

·       Cookshack's proprietary IQ5 electronic time and temperature controller is easy to use and gives you consistent results with every load. It has a smoke, cook and rest features that are standard on all commercial FEC models. When the smoke-cook cycle has finished, the controller drops automatically to the resting temperature of the product.  

·       The IQ5 digital controller includes eight programmable, customizable cooking pre-sets, alarm cycle, 16 character LCD, and USB port for downloading up to 512 hours of cook time onto formatted USB flash drive.

·       The FEC240's optional meat probe allows the user to specify a smoke or cook temperature. Simply insert the meat probe into the product and when the desired internal temperature of the meat is reached, the smoker automatically drops into a rest cycle.

·       Electronically-controlled temperature eliminates large heat fluctuations that dry and shrink meat. Patented automatic wood pellet fed system is operated by the IQ5 controller. It knows when the smoker needs more fuel; you can go away and leave it to do its job without your attention.

·       Easy, flip-of-the switch auto start brings the FEC240 rapidly up to smoking temperature. Burners stay on when doors are opened, and heat recovery occurs in as little as 10 minutes. Some other smokers take up to an hour to bring the temperature back up. This affects the quality of the meat and lengthens the cooking cycle.

·      Consistent flavor results! With the FEC240 precisely regulated patented wood delivery system there is no chance of an operator adding more wood and changing the flavor of the meat.

·       Because the FEC240 is 100% wood burning, for both its heat source and flavor source, results are consistent. In gas units and stick burners, the wood logs get smaller as they burn, and as new product is added, wood must be added as well. Since product is cooking while new wood is added, the flavor is affected.

·       Racks are removable and can be power washed for quick clean up. The shelves are easy to remove for cleaning.

·       No professional set up required — just roll it in place and get started!

·       The FEC240's rugged stainless steel interior and exterior is a stronger, higher grade of steel than the black carbon steel used in many other brands of smokers.

·       This tough smoker is built on a steel perimeter which will not warp or bend, even if the smoker is moved by a fork lift. This is one sturdy piece of equipment! Some other brands make a cheaper smoker, but no one makes a stronger one.

·       We use Spin-Glas™  insulation, for superior heat retention and fuel savings, between the double layers of the FEC240's body. Your energy costs are reduced because the smoker is not constantly re-heating due to heat loss. ·      All seams are sealed so that no moisture can leak into the insulation — no fire danger (Unlike some other brands, we do not use mineral wool insulation because it deteriorates over time and it can absorb moisture if seams are merely riveted and not sealed. Grease-soaked insulation can be a fire hazard.)

Love this smoker! I do travel with my smokers so wish it was a little more travel friendly. Would like to have a place to strap in tie down ect. And maybe a different door latch system. Maybe a semi trailer door type latch that still gives you 3 points of fasteners with one handle. But it's a cooker and that's what it does and it does it very well!! Proud to own such a fine product.

Just finished my first smoke in my FEC240. Let me start by stating that I have purchased three FEC100's and recently a PG500 all since March of 2010. In the early days Bill and Tony in customer support exercised extreme support and tolerance in putting up with me as I learned the process to keep my FEC100 clean and operating trouble free. I will mention that I caught those first few units on fire more times than I will admit. User error every single time! Now we spend about 3 or 4 minutes scraping the trough out and replacing the foil in the recommended areas and we have not flamed one of these up in more than three years. You can probably guess that we use these a lot. Every single day. I should also mention that we have had zero mechanical issues with these units in a few years also. I will say that I light them with a MAP gas torch now and no longer use the igniter. Its just faster and easier for me We have a small sub shop and smoke top sirloin, prime rib, chicken and pork shoulder. I was always convinced that I could not be happier with the product from that FEC100. It really does produce a fantastic product. A few months ago I was ordering some rub from Cookshack and stumbled across the PG500 and bought one for home use. Oh my goodness! I had no idea this thing even had a charbroiler! I have zero use for the stove in my home anymore. The PG500 is completely in a class all by itself. I digress, I began by mentioning the FEC240. I am not really sure where to begin. I have only run one load of meat through this machine and my vocabulary will not allow me to adequately express the degree to which I am profoundly happy with it. I only smoked about 120 pounds of pork shoulder and a Brisket. The pork which was done using the preset \"2\" on an evening which was a bit chilly, yes I pushed the smoker outside and it was about 31 degrees. Preset 2 will give you a 6 hour smoke at 180 degrees then cook at 250 degrees for 8 hours. Wow! totally even cook throughout. color, and texture/consistency perfect. I would recommend a show shovel to scoop these butts off the racks. It was sort of like grabbing hand fulls of mashed potatoes. Pulling this pork was effortless. Similarly the Brisket was exactly as you would expect. I am anxious to try all of the rest of our menu items in this smoker. I will certainly post any thoughts or impressions pertaining to this unit in the future.
