Smoky Bacon Potatoes
Ingredients
Potatoes
Bacon
Salt
Pepper
Instructions
Peel and slice potatoes. Place on lightly greased, shallow baking pan. Add salt and pepper to taste. Place a layer of thinly sliced onion on top. Put 2 - 3 strips of bacon across top of onion. Cover pan with aluminum foil with holes punched for smoke penetration.
Smoke-cook at 225F for 2½ - 3 hours with mesquite or hickory wood
