Smoked Summer Vegetables

Ingredients

Summer Squash
Zucchini
Onion
Mushrooms
French Cut Green Beans

Instructions

Make cup shaped containers from heavy duty aluminum foil.
 
Thinly slice both squashes and the onion. Mix all the vegetables together. Put about a cup of the mixture into each foil cup. Season to taste. Pinch together the top and punch a couple of holes around the top, to allow just a little smoke to penetrate.
 
Place the vegetable cups in the smoker and smoke at 200°F for 1 hour with hickory or apple wood.
