Wintry Smoked Acorn Squash


5 c. Apple Cider
2 Tbs. Brown Sugar
2 tsp. Cinnamon, plus more for serving
2 Medium Acorn Squash, halved and seeded
2 Tbs. Butter


In a large saucepan,combine the cider, sugar and cinnamon. Bring to a boil, then reduce heat and simmer until sugar is melted. Let cool. Cut squash in half and remove seeds. Place squash halves in Ziploc bag. Pour cider mixture in bag and seal. Let sit at room temperature for 2 hours. Preheat smoker to 225°F and add 2 oz. Hickory Wood.Remove squash from bag and place in smoker cut side up. Divide butter between the squash halves and smoke for 3 hours. Serve with cinnamon to taste.
