Smoked Cornish Hen with Raisin Compote


1 Cornish game hen (8 - 10 ounce)
Raisin Compote:
2 cups seedless raisins
2 each shallots, minced
1/2 cup dry white wine
Juice of one lemon
1 Tablespoon granulated sugar
1 Tablespoon toasted ground cumin
1/2 Tablespoon salt
1/2 Tablespoon fresh ground pepper
Cranberry Compote:
1 cup whole fresh cranberries
2 Tablespoons granulated sugar
1/4 cup Zinfandel or dry red wine
Zest of 1/2 orange
2 whole cloves


Smoke-cook at 225°F with 2 ounces of hickory wood until done Raisin Compote: Add all ingredients. In sauce pan, bring to boil. Cover and simmer for 1 hour. Set aside
Cranberry Compote: Combine all ingredients in sauce pan and simmer 10 minutes. Set aside.
Place fresh bread in center of plate, place smoked hens on top, sauce on opposite sides, garnish with fresh cranberries, whole and julienne chives.
Yield: 2 servings
