Smoked Chicken Bruschetta
1 pound smoked chicken, finely diced
1/2 cup finely chopped green onions
3 cups plum tomatoes, seeded and chopped
1 jalapeno pepper, seeded and minced
1 Tablespoons balsamic vinegar
Salt and freshly ground black pepper
1 pound loaf Italian bread
1/3 cup prepared pesto sauce
Pre-smoke the chicken using your favorite method. Cool. Remove chicken meat from bones.
Preheat oven broiler.
Toss chicken with green onions, tomatoes, jalapeno pepper, sprinkle with vinegar and season with salt and pepper, blending well, then reserve.
Cut bread in half lengthwise.
Place cut side up, on a baking sheet.
Brush pesto sauce over bread evenly, then toast in preheated oven.
Remove from oven.
Top the toasted bread with the chicken mixture. Cut into small slices and serve immediately. Garnish with fresh basil leaves, if desired.
Place on plate in circular pattern with basil leaves in center.
