Heather's Smoked Kabobs & Marinade
4 whole chicken boneless skinless chicken breasts
2 packages beef stew meat
2 big cans pineapple chunks
1 ½ pints cherry tomatoes
1 red bell pepper
2 yellow bell pepper
2 green bell peppers
1 cup Worcestershire sauce
2 cans pineapple juice
Juice of ½ lemon
1 can frozen orange juice concentrate mixed with ½ can water
Salt and pepper to taste
Cut chicken and bell peppers into equal sized chunks. Try to get the chicken the same size as the beef.
Thread chicken, beef, pineapple, tomatoes, and bell peppers onto skewers.
Using Cookshack Jerky Rods as skewers also works well.
Combine marinade ingredients in a zip top bag, seal, and shake to mix. Place kabobs into the bag and let marinate over night or up to 24 hours.
Smoke-cook at 225ºF for 2 to 2 ½ hours, or until done, and enjoy!
