5 Spice Seasoned Young Duckling Smoked Over Cherry Wood


1 duckling, 5 - 6 pounds
1 Tablespoon Five Spice Powder
2 Tablespoons Soy Sauce
1 cup brown sugar


Rub the cavity and outside of the domestic ducklings with a paste of Five Spice Powder, soy sauce, and brown sugar.
Preheat smoker to 225°F. Smoke-cook for 21/2 to 3 hours over hickory wood.
Serve on a platter with hot sauce, rice, black beans, escarole sautéed with garlic, and sweet potato chips. Recommended wood: cherry.
