Spicy PB&J Chicken Wings


2 lb. Chicken Wings
1/2 Cup Instant Mashed Potato Flakes
2 Tbsp. Oil
1 tsp. Kosher Salt
1 tsp. Black Pepper
1 pinch Cayenne Pepper

Finishing Sauce:
1/4 Cup Peanut Butter
1/4 Cup Jalapeno Pepper Jelly
1/4 Cup Seasoned Rice Vinegar
2 Tbsp. Fish Sauce
2 Tbsp. Soy Sauce
1 Tbsp. Toasted Sesame Oil
4 tsp. Minced Garlic
1/2 tsp. Red Pepper Flakes
1 dash Chili Garlic Sauce


Preheat PG1000 to 425°. Whisk mashed potato flakes, oil, Kosher salt, black pepper and cayenne pepper in large bowl. Add chicken wings and toss to coat. Place coated chicken wings on the indirect side of the PG1000 and smoke for 40 minutes. Dip chicken wings in finishing sauce, place back on the indirect side and smoke for another 10 minutes. Remove and serve.
