Guacamole 2 Ways

Ingredients

BASE

8 Avocados

2 tsp. Lime Juice

1 tsp. Ground Cumin

2 tsp. Salt

½ tsp. Black Pepper

 

Sweet Heat Guacamole

Bacon

Brown Sugar

-mix bacon into guacamole base, cool and serve

 

Roasted Fresh Salsa Guacamole

1 pint Cherry tomato halves

12 oz. Roasted Red Peppers

¼ c. diced onions

¼ c. jalapeno peppers diced

4 cloves garlic minced

-Mix all ingredients and fold into guacamole base, cool and serve.


Instructions

Cut avocados in half and de-seed. Cold Smoke in the PG500 warming drawer for 30 minutes.

Peel avocados and mash in a bowl. Add lime juice, cumin, pepper and salt. Mix well. Divide in half.

Toss tomatoes with olive oil, garlic powder and black pepper.

Grill bacon on the indirect side of the PG500 at 325° and smoke tomatoes in the warming drawer for 20 minutes.
