Ingredients

Tilapia

Fast Eddy’s All Purpose Rub

Flour tortilla

Shredded cheese

Shredded cabbage

 

Marinade:

6 oz. Pineapple juice

2 Tbs. virgin olive oil

2 Limes squeezed

 

Mango Salsa:

Fresh tomato

Fresh mango

Cilantro chopped

Red onion (carmalize on grill)

Lime

1 Tbs. Olive Oil


Instructions

Make marinade and place tilapia in marinade for 30 minutes. Remove from marinade and place on seafood grill. Season tilapia on both sides with Fast Eddy’s All Purpose Rub. Grill on PG500 until the internal temperature is 160 degrees.

Add tilapia to grilled tortilla shell, add mango salsa, shredded cabbage and shredded cheese.
