Smoky Joe Sandwich
Ingredients
To each lb. of ground beef, add:
1 c. chopped onion
1/2 c. ketchup
1/2 c. tomato sauce or salsa
1/2 c. green pepper, chopped
2 Tablespoon Lea and Perrins Worcestershire Sauce
1 Tablespoon packed dark brown sugar
Instructions
Preheat Cookshack smoker to 250F. Place ground beef in a thin layer in a foil pan, chopped loose with spatula. Smoke-cook at 250F until ground beef is easily crumbled. Remove from smoker and drain fat. Add the rest of the ingredients to the meat, mix, and return to the smoker for one hour.
Serve with potato chips and dill pickle.
Yield: 5 servings per pound
