Cookshack's Restaurant & Catering Cooking Class



This class is taught by Fast Eddy™ himself (Ed Maurin), David Bouska of Butcher BBQ Competition Team/Butcher BBQ Stand, and Cookshack President/CEO, Stuart Powell.  Each class option includes most meals and hotel stay. Class size is limited to 25.

Option 1: 3-Day Class- July 16, 2017 

Day 1 includes Business Planning- "Knowing the Financials of Your Business", Day 2 and 3 includes Hands-On "Taking Your Barbecue to the Next Level"

This class includes 4 nights hotel, lunch Sunday, all meals on Monday and Tuesday, informative binder and class supplies. You will be taught about restaurant financials and typical restaurant business plan review. You will be able to write your own business plan with the instruction given. Also, included is portion control and food costing. The hands-on part of the class is set in a working commercial kitchen and focuses on raising your profitability by teaching you about meat cuts, re-thermalization, menu ideas, and waste reduction. Students will trim, rub, and prepare chicken, ribs, pork butt, and brisket in Cookshack smokers and then serve it to patrons of the Ponca City Country Club at the end of class on Tuesday.

Option 2: 2-Day Class- July 17 & 18, 2017 

Hands-On "Taking Your Barbecue to the Next Level

This class is a hands-on event that will guide you through the maze of selecting cuts of meat, marinades, rubs, smoking woods, and smoking techniques. The hands-on part of the class is set in a working commercial kitchen and focuses on raising your profitability by teaching you about meat cuts, re-thermalization, menu ideas, and waste reduction. Use Cookshack smokers to prepare the meat cuts and then work the serving line at the Ponca City Country Club at the end of class on Tuesday.  3 nights of hotel, all meals, informative binder, and class supplies are included with this class.

December 1 & 2, 2017

Class will be taught by Ed “Fast Eddy™” Maurin and David Bouska (Butcher BBQ Team). This is a hands-on class designed to teach you how to prepare and cook the four KCBS categories: pork ribs, pork butt, brisket and chicken and how to make a presentation box. This class includes a complimentary KCBS Certified Judging Class on Dec. 1st that will teach you exactly what the judges are looking for when judging barbecue competition entries
