Raw Cocoa Smoked Sirloin Strip


1  10 to 12 lb. sirloin strip, fat removed
2 Tablespoons sea salt 
1 Tablespoon black pepper 
4 Tablespoons molasses
1 c. raw cocoa nibs, crushed


For the mop:
Preheat the smoker to a maximum of 325°F. In a bowl, combine the salt, pepper and molasses. Mix well, using your fingers. 
Place the sirloin strip on a shallow aluminum pan and spread all the salt mixture over it making sure all parts are seasoned. Quickly place the strip loin in the smoker for 45 minutes to brown.
Drop the temperature of the smoker to 250°F. Add ½ cup of the chopped raw cocoa nibs and let smoke for 3 minutes.
Open the smoker and add the remaining nibs and let smoke until an internal temp of 130°F is reached. Remove from the smoker and let sit for 15 minutes. Slice and serve.
