Cookshack Steamship Round

Ingredients

40 lb. steamship round

Instructions

Load round(s) into Cookshack Series 100, 200, or 300 smoker.

Load wood box with 10 oz. hickory or mesquite, or a blend. 

Smoke-cook at 250F for 45 minutes, then 190F for 13 hours.

This cooks the round to medium well in the center. 

For a rarer center, smoke-cook for 12 hours at 190F.
