Cookshack Herbed Veal Chops


1 c. olive oil 
5 lg. garlic cloves 
1 1/2 Tablespoon grated orange peel 
1/4 teaspoons freshly ground pepper 
6 - 1 1/2" thick veal rib or loin chops 
6 fresh sage leaves


Combine olive oil, garlic, orange peel and pepper in food processor. Process until garlic is finely chopped. Place veal chops in large shallow baking dish. Rub chops with 6 sage leaves. Pour oil mixture over. Refrigerate overnight. Smoke chops in smoker oven for 1 hour at 200°F.  

Yield: 6 servings
