Rio Grande Smoked Chicken Salad

  • 1 pound smoked chicken, finely chopped
  • 15 ounce can black beans, rinsed and drained
  • 15 ounce can whole kernel corn, rinsed and drained
  • 4 Roma tomatoes, seeded and diced
  • 1/2 cup diced green onion
  • 2 jalapeno or serrano peppers, seeded and minced
  • 1/2 cup prepared Italian salad dressing
  • 1 Tablespoon dry taco seasoning mix
In a large mixing bowl combine the chicken, beans, corn, tomatoes, onion and peppers, tossing well to blend.

In a small mixing bowl combine the salad dressing with taco seasoning mix, pour over chicken mixture, blending well. Refrigerate until serving time.

Serve on crisp lettuce leaves garnished with additional tomatoes and jalapeno or serrano peppers, if desired.
