- 2 Cornish game hens
- 1 teaspoon fresh oregano, chopped
- 2 Tablespoons olive oil
- 1 teaspoon fresh thyme, chopped
- 1/2 cup fresh lemon juice
- 1 teaspoon fresh rosemary, chopped
- 1 cup fresh orange juice
- 1 teaspoon fresh basil, chopped
- 3 garlic cloves, crushed
Combine olive oil, lemon juice, orange juice, garlic and herbs. Pour
mixture over the cleaned game hens and refrigerate 1 - 2 hours, turning
occasionally.
Cut 3 carrots and 2 celery ribs into strips and thinly slice 2 red
onions. Remove game hens from marinade. Salt and pepper inside and
outside. Stuff cavity of each equally with vegetables. Smoke-cook at
225F for 2 - 3 hours or until juices run clear.
