Instructions
Hollow out your apples. Sprinkle cinnamon & sugar in the center. Grill the apples on the indirect side of the PG1000 at 350° for 20 minutes. Remove from grill. Add a scoop of ice cream, walnuts, caramel and garnish with a cinnamon stick.
Recommended wood: >fruitwood pellets
Smoked Apple Pie
Ingredients
2-9" Pie Crusts
8 Apples, peeled, cored and sliced
1/2 c. All Purpose Flour
1 c. Sugar
1/2 tsp. Salt
1 2/3 c. Sour Cream
2 tsp. Vanilla
1 Egg
Topping:
1 c. Walnuts, chopped
1/3 c. Sugar
1 Tbs. Cinnamon
1/2 c. Butter, softened
1/2 c. All Purpose Flour
1/3 c. Brown Sugar
pinch of salt
Instructions
Preheat pellet grill to 425°F. Combine the sour cream, sugar, flour, egg, vanilla and salt. Mix Well. Add apples and stir until evenly covered. Spoon into the pie crust. Bake at 425°F for 15 minutes on indirect side. Reduce heat to 350°F and continue cooking for 40 minutes. Meanwhile, combine nuts, flour, sugars, cinnamon and salt in bowl and mix well. Cut in butter until mixture is crumbly. Spoon over pies and bake for 15 more minutes. Remove, let cool and serve.
Smoked Pumpkin Pie
Ingredients
2 c. Pureed Pumpkin
3/4 c. Sugar
1 tsp. Salt
1/2 tsp. Ginger
1/2 tsp. Nutmeg
2 Eggs
1 can Evaporated Milk
1 9" Pie Crust
Instructions
Cut pumpkin in half. Smoke the pumpkin halves in AmeriQue at 250°F for 2 hours with 2 oz. hickory wood. Remove from smoker. Scrape out the seeds. Cut pumpkin in pieces and peel the skin off the pumpkin. Cut up pumpkin meat and puree. Mix dry ingredients in a bowl. In a separate bowl, beat eggs, add pumpkin, spices and stir in evaporated milk. Pour into pie crust. Bake on the indirect side of the PG1000 at 425°F for 15 minutes. Reduce temperature to 350°F and bake for 50 minutes. Cool and serve.
Pumpkin Maple Nut Bread
Ingredients
9 prunes
3 Tablespoons water
2½ cups all-purpose flour
1 cup sugar
1/2 cup quick cooking oats
2 teaspoon baking soda
1 teaspoon ground allspice
1 teaspoon ground cinnamon
2 cup cans solid pack pumpkin
1 cup chopped pecans
1/2 cup maple syrup
1/4 cup vegetable oil
2 egg whites, beaten to blend
Instructions
Soak prunes in a dish of water for 30 minutes. Smoke over cherry wood for 20 minutes at 225°F. Pre-heat conventional oven to 350°F. Butter a 9x5x2 1/2 inch loaf pan. Puree smoked prunes and water in processor until smooth. Combine flour, sugar, oats, baking soda, allspice and cinnamon in a medium bowl. Mix pumpkin, pecans, maple syrup, oil, egg whites and pureed prunes in a large bowl. Stir dry ingredients into wet mixture (batter will be thick). Spoon batter into loaf pan ¾ full. Smooth top and bake for 65 minutes. Turn out on rack and let stand for 10 minutes. Slice and serve with vanilla ice cream.

Smoked Cheddar Apple Pie with Smoked Glazed Pecans
Ingredients
1/2 lb. cheddar cheese
2 C. pecans
6 Tbsp. honey
1 1/2 tsp. cinnamon
1 (8 oz.) pkg cream cheese; softened
1 C. sugar
1 egg, beaten
1/2 tsp. vanilla
1/2 C. brown sugar
2 Tbsp. lemon juice
2 Tbsp. flour
1/4 tsp. nutmeg
1/4 tsp. salt
4 lbs. Granny Smith apples; peeled, cored, and thinly sliced Unbaked crust for 1 large deep-dish pie
Instructions
Preheat smoker to 175°F with 2 oz. apple wood.. Place the cheese directly on the top rack of the smoker. Place the pecans in a disposable aluminum pan and place on the bottom rack. Fill another disposable pan with ice and place on the cold smoke baffle on the bottom rack. When you see smoke coming out the vent hole in a steady stream, turn off the smoker. After 1 hour, taste a pecan to see if it needs more smoke flavor. If so, repeat the cold-smoking process. Thinly slice the cheddar cheese. Preheat oven to 375°F. Put the smoked pecans on a baking sheet and toss with the honey and 1/2 tsp. cinnamon. Bake for 25 to 30 minutes, until lightly toasted. When cool, chop 1 1/2 C. of the pecans and set aside the remaining whole nuts. Leave the oven on. In a large bowl, combine the cream cheese, 1/2 C. of the sugar, egg, and vanilla. Beat until smooth and creamy. In another bowl, combine the remaining 1/2 C. of sugar, brown sugar, lemon juice, flour, the remaining cinnamon, nutmeg, and salt. Toss in the apples and chopped nuts and allow to rest for about 15 minutes. Spread the cream cheese mixture on the bottom of pie crust. Cover with a layer of sliced smoked cheddar, and top with a layer of the apple mixture. Repeat with layers of the cheddar and apple mixture until the crust is very full (the filling will decrease in height as it bakes.) Bake for 50-60 minutes, until the crust is lightly browned and the apple mixture is bubbly. Garnish with the whole glazed pecans. Serve warm with whipped cream or vanilla ice cream.
Baked Smoked Bananas

4 bananas
4, 3-inch sprigs, fresh rosemary
4 teaspoons maple syrup
4 Tablespoons ground pecans
Instructions
Cut unpeeled bananas in halves, lengthwise. Put unpeeled banana halves in smoker. Load wood box with small chunk of hickory wood and rosemary. Smoke-cook for 25 minutes at 180°F. Heat conventional oven to 400°F. Remove bananas from skin and place on lightly greased pan. Spread 1/2 tsp. of maple syrup and 1/2 Tbs. of nuts on each banana half.Bake for 20 minutes or until golden. Serve warm.

2 cups all purpose flour
1 teaspoon salt
1 teaspoon baking powder
2 teaspoon baking soda
3/4 cup unsweetened cocoa
2 cups granulated sugar
1 cup vegetable oil
1 cup hot coffee
1 cup milk
2 each whole eggs
1 teaspoon bourbon
For the Frosting:
2 pounds semi-sweet chocolate, grated
1 pint fresh whipping cream
6 ounces bourbon
Instructions
Sift together dry ingredients in a mixing bowl, two times. Add oil, coffee, and milk, mix at medium speed for 2 minutes. Add eggs and bourbon, beat 2 more minutes. Batter will be thin. Pour into two greased and floured 9"" cake pans, or two 8"" cake pans and six muffin cups. Smoke at 325F for 25 - 30 minutes. Cool cakes 15 minutes before removing from pans. Cool on wire racks. Frosting: Grate chocolate into a stainless steel mixing bowl or hotel pan. Add cream. Place in smoker and smoke at 185°F for 30 minutes over hickory, apple, oak or pecan shells. Stir mixture every 15 minutes. If you desire a heavier smoke flavor increase the smoking time by 15 minutes. If chocolate mixture is not completely melted after 30 minutes, place over a double boiler and bring up to 160°, whisk until homogenous, add bourbon, whisk until smooth. Cool thoroughly. When you are ready to frost cake beat until fluffy on mixing machine and decorate cake.
Yield: Two 9" double layer cakes

Ingredients
Canned Biscuits, split in half
Hershey’s Chocolate Bars
Carmel Marshmallows
Powdered Sugar
Cinnamon
Instructions
Pull biscuit in half. Flatten both pieces. Add 2 pieces of the chocolate bar and 1 marshmallow. Place top half of biscuit over top and pinch sides together with a fork to seal the chocolate and marshmallow in. Brush outside of biscuits with melted butter. Sprinkle with powdered sugar and cinnamon. Place on the indirect side of the PG1000 at 375° for 15 min. Use tongs to flip biscuits over half way through. Remove from grill and serve. Add more powdered sugar and melt down 1 chocolate bar to sprinkle over tops. Serve.
Caramelized Brown Sugar Cinnamon Grilled Pineapple
Ingredients
One pineapple cut into spears
½ cup Brown Sugar
½ cup Butter, melted
1 t Cinnamon
Instructions
1. Cut the pineapple into spears. Mix together the butter, brown sugar and cinnamon. Add the pineapple to the mixture and toss.
2. Grill on the direct side of the PG1000 for about 7-10 minutes at 350°. Sprinkle with cinnamon. Remove and use the remaining mixture to baste on the pineapples. Serve warm.
